Greek Potatoes Recipe – new potatoes tossed in olive oil, Greek seasoning, and lemon. Perfectly crispy on the outside and creamy on the inside, they're a side dish that steals the show.
Equipment:

Ingredients:

small red potatoes

cup
olive oil

Greek seasoning
1
lemon,
zested and juiced
2
sprigs
chopped fresh oregano
Instructions:
Preheat oven to 400ºF. Spray a rimmed baking sheet with nonstick cooking spray.
Wash and cut potatoes into 1-inch cubes.
In a large bowl, toss together potatoes, olive oil, Greek seasoning, lemon zest and lemon juice.
Spread potatoes onto the prepared pan in a single layer.
Bake for 40 minutes or until fork-tender and golden brown.
Notes:
What potatoes are best for roasted potatoes? I use small red potatoes. You can use fingerling potatoes, russet potatoes, or Yukon gold potatoes.
What is Greek Seasoning? Greek Seasoning is a spice blend that usually contains oregano, garlic, lemon, mint, bay leaves, and black pepper.

onion powder
Sprinkle the potatoes with feta cheese for extra Mediterranean flavor.
